Poor Man’s Filet Mignon
1-1/2 pounds ground chuck
½ cup plain bread crumbs
½ tsp mustard
1 egg
½ cup finely chopped onion
1 package thick cut bacon
2 tbsp vegetable oil for frying
1 tbsp garlic powder
2 tsp salt
1 tbsp coarse black pepper
¼ tsp cayenne pepper
Mix egg and mustard.
Add ground chuck, bread crumbs and onion. Weigh out 5 oz of the mixture and make into a
meatball then flatten slightly (to resemble the thickness of a true filet
mignon). Wrap a slice of bacon around
each patty. On a plate, combine garlic
powder, salt, coarse black pepper and cayenne pepper. Lightly coat each side of patty with spice
mixture. In a large skilled, add
vegetable oil and fry patties – a few minutes on each side. These are supposed to be cooked medium rare,
but taste great even if they are well done.
Serves 4

Hey Michael. I'm guessing you are talking mashed potatoes? :) Garlic mashed potatoes go very well with this. I always use the Yukon Gold potatoes for my "mash mix." Reply...

This is just one of my recipes that I will be adding. It of course goes very well with mashed potatoes and a salad. My family loves this, but be warned that it is very rich, and not too low in fat. If I were going to cut down on the fat content, I would use lean ground beef and some turkey bacon. My family loves this, especially my husband. Reply...

yeah, I bet! I cook for just me (and I use the term 'cook' loosely). I'm sure it gets easier if you do it a lot but it seems like an impossible art to plan and cook for lots of hungry people within a budget.. Reply...
